Whole Wheat (50%) Cinnamon Raisin Sourdough Bread | Yellow Dot Rated Healthy Balance Bread

 To make the dough, first combine all the dough ingredients from the table. Mix and knead well using your hands or an electric mixture. Make a soft and smooth dough. Place the dough in a lightly greased container and allow it to rise for 1.5 to 2 hours in room temperature until it about double in size.

Gently deflate the dough and transfer it into a clean slightly greased work surface. Roll and pat the dough into a rough rectangle approximately 6”x20”.

Stir together sugar, cinnamon, and flour for filling.  Beat one egg with 1 tablespoon water in a separate small bowl. Brush the dough with the egg water mixture and sprinkle it evenly with the sugar, cinnamon and flour mixture filling.  Spread raisin evenly but leave a bear strip about 1’ wide along one short edge. Roll the dough (starting with the edge covered with filing) into a log. Pinch the bear edge to seal. Transfer the log, seam side down, to a lightly greased 9”x5” loaf pan. Cover and allow the bread to rise (in room temperature) until it is about 1” over the rim of the pan. It should take about 1 hour.  Preheat the oven to 350-degree F.  Bake the bread for about 20 minutes. Rotate the pan 180 degrees for even baking and cover it lightly with aluminum foil (be careful, wear gloves as oven would be hot). Bake it for another 20 minutes. Bread crust should be golden brown. Turn off the oven and leave the bread for in there for about 5 minutes. Take it out and let it cool. Gently loosen the edges and turn it of the pan. Slice into 12 equal slices and enjoy and eat with confidence!
