Like many others I also rushed to the grocery stores to pile on the grocery and other day-to-day necessities to help me and my family survive to cope with this COVID-19 situation. Being a dietitian, I piled on lots of green vegetables and fruits that now I am juggling on how to consume it healthfully and un-wastefully. We have a juicer at home, so I thought to make this refreshing and immune boosting juice for my family and I. I then blended the pulp and froze it to be used later with smoothies and homemade fresh veggie breads. This way I was able to use my overstock veggies and fruits a little longer so that I can avoid going to grocery store for a couple of weeks for health and safety of everyone.
This homemade juice is full of refreshing flavor and immune boosting power while low in calories and full of health promoting nutrients. Actual carbohydrate, protein and fiber content would be a little lower than the nutrition label is showing on the recipe card due to some of it would be lost in the pulp. However, it is very refreshing with immune boosting and healing power. One serving of juice will fulfill your daily requirement of vegetables on a 2000 calorie diet. It is an excellent source of immune boosting and other healthful vitamin and minerals; Vitamin A (63% DV), Vitamin C (104%), Folate (50%), Vitamin K (566%), Manganese (40%). Ginger has been used for a long time in traditional and alternative medicine for its powerful antioxidative and anti-inflammatory properties.
Caution: Talk to your healthcare provider if you are on any blood thinners because it provides 556% DV of vitamin K (excessive) that might negatively impact your medication.

INSTRUCTIONS: Wash all the vegetables thoroughly under running water. Put them into your juicer according to the manufacturer’s instructions. My juicer makes about 4 cups of juice.
