10 Minutes Veggie Wrap with Spinach and Cucumber

This veggie wrap is delicious and super easy to make with common ingredients in your pantry. This recipe has been almost our daily lunch during working from home period. According to our food rating system (Food Coach) it has following healthy qualities.

  • Moderate in calories per serving
  • Healthy balance of total fat, and saturated fat
  • Contains zero trans fats
  • Healthy balance of total carbohydrates, protein, and dietary fiber
  •  Healthy balance of added sugars
  • No food additives, artificial flavor, or color

However, this food is rated as a Red dot food due to it has little more sodium than our Food Coach recommends for its calorie level. Food Coach recommends no more than 115 mg sodium per 100-125 calories on a general healthy diet. High sodium diet is believed to increase blood pressure which is a known risk factor for heart disease and stroke.

*We could not cut down anymore salt due all the salt came from the ingredients. We did not use any extra added salt. You can still use this great recipe but be mindful of cutting down your salt with foods eaten with other meals to ensure daily healthy balance of salt in your diet.


Recipe Ingredients:

Recipe Instructions: Wash all the veggies thoroughly. Finely chop all the veggies and put them in clean paper towel to dry excess water. Mix the veggies with honey mustard dressing and feta cheese. Divide the mixture in 4 equal parts.

Warm tortilla on low heat. Spread 1 tablespoon cheese on the bottom cucumber then spread veggies. Roll each wrap up and cut in half diagonally. Enjoy and eat with confidence!

Nutrition Profile and Therapeutic Health Benefits: This recipe is moderate in calories and is a healthy balance of carbs, fat, protein, and dietary fiber. It provides about 2 oz equivalent of MyPlate grain and 1 cup equivalent of vegetables. This recipe is an excellent source of Vitamin K (>100% DV) and good source of Vitamin A (12%) and Vitamin C (17%) Vit. K is essential nutrients necessary for responding to injuries to facilitate normal blood clotting. Vitamin A is known to improve vision and Vitamin C boosts immunity.
